Poussin are young chickens with a light and delicate flavour and are a quick alternative to roasting a whole chicken. As well as being an ideal main course if you are entertaining, they can be spatchcocked and roasted or grilled, or simply barbecued. Prepare them as you would a whole chicken and remember to baste regularly. Allow one whole poussin per person. Two whole poussin per pack weighing 400g to 450g each.
